Summit’s 2 Course Lunch Menu

Small Main Meal
Green Asparagus Salad
crisp Iceberg lettuce with bitter Treviso & Witlof salad, toasted hazelnuts, Shiraz vinegar & a Ligurian Extra
Virgin Olive Oil. Garnished with Prosciutto , Parmigiano Reggiano cheese & a poached egg.
Fettuccini
pesto, semi-dried sundried tomatoes, slices of smoked chicken in a light Sauvignon Blanc sauce.
Topped with shaved parmesan.
Grilled Sword Fish Kebabs
on lemongrass skewers and served atop black rice risotto,
with lemon anchovy sauce and tomato & basil concasse.
Vegetable Stack
oven roasted marinated eggplant, zucchini, capsicum and field mushroom topped with bocconcini cheese &
rocket leaves. Accompanied by capsicum tapanade, basil & balsamic oil and parmesan toast.
Harissa Lamb
warm slices of Harissa infused lamb loin, served with a Middle Eastern eggplant salad of red onion, pine nuts,
coriander and mint.
Bahmi Goreng
Javanese fried noodles with beef, chicken, prawn & ve getables in a spicy sweet soy sauce.

Dessert
Apple Charlotte

apple custard surrounded with poached apple, set on shortbread with cinnamon anglaise.
Maple Syrup & Coconut Cheesecake
with caramelised banana and peanut brittle.
Chocolate Chip Cookie Cup
filled with espresso icecream, topped with warm chocolate fudge.
Strawberry Vacherine
meringue nest filled with whipped cream & fresh strawberries covered in chocolate sauce.
